Are The Cupcakes At Chip And Joanna’s Bakery REALLY That Good?

If you’ve driven through Waco Texas at least one time you’ve seen billboards advertising Chip and Joanna Gaines’s bakery, Silos Baking Co. They’re usually cute little quotes about road tripping with cupcakes, signed by Chip, and they’re just this subtle reminder that, “oh yeah, I’m a mile from a pretty famous Texas bakery and maybe I should stop by.”

As someone with a massive sweet tooth, I was more than happy to stop by Silos Baking Co on my most recent trip through Waco, TX. Cupcakes have been trending downward since their heyday in the early 2000s, but let’s face it: a delicate little cake topped with a big swirl of buttercream frosting will always be delicious.

And since the lines at Silos Baking Co are typically out the door on any given day, I’ve known for a long time that Silos Baking Co is very popular. So I stopped by recently to try a few baked goods.

The Cupcake Verdict

Let’s get right to it, shall we?

The cupcakes, first off, are ridiculously well priced. As someone who has explored bakeries all over the country, I was shocked to pay just $5 for a boutique cupcake and $4 for a giant cookie. (It’s not absurd to pay $6-8 for pastries these days!) 

There are 5 regular flavors of cupcakes at Magnolia: Lemon Lavender, Shiplap (a white cake with white frosting), The Chocolatier, Strawberries ‘n Cream, and Cookies ‘n, Cream. They also have two yummy seasonal flavors.

I went for the Lemon Lavender, which is one of their best sellers, but that Campfire specialty flavor was also calling my name.

Skip this next part if you hate cringe-y words, but I’m just going to say it: the cupcake was perfectly moist. There it is. I said the word and we can move on now. 

But it was really a delicious little cake that tastes great on its own without frosting.

The heap (and I really mean HEAP!!) of buttercream frosting on top was equally delicious. It wasn’t too thick and buttery where it overwhelmed the delicate little cupcake, which is typically true of cupcakes and the main reason why I don’t ever order cupcakes at a bakery. The frosting on Silos Baking Co cupcakes tastes like it’s whipped, so it’s light and airy and easy to bite straight through to the cupcake.

The Cookies At Silos Baking Co

The cookies are, in my opinion, the #1 item at Silos Baking Co. There are about 5 different types of cookies, and several of them are gluten free. 

The very best item at Silos Baking Co is the Silos Cookie. One bite in and I was in love! This cookie is insane.

(I think the real joy in it is the surprise, because it looks rather lackluster and boring behind the pastry case, especially when compared with all of the colorful cupcakes. But once you taste it…holy delicious.) 

The Silo cookie is, like the cupcakes, oddly inexpensive. It’s a $4 cookie, which is unheard of in this economic climate. And it’s a MASSIVE cookie that could easily be split in half and shared. It’s an oatmeal peanut butter chocolate chip walnut cookie, which is quite a mouthful to both say and eat. 

And it’s so yummy.

The Real Attraction Of Silos Baking Co

Just like all of Magnolia Market, including the shops, nearby Magnolia Café, and the charming Hotel 1928, Silo Baking Co relies primarily on one key ingredient: charm.

Yes, the cupcakes are delicious, and the little bakery is full of lots of must-try pastry items. But the real reason folks line up down the block, even in 100 degree temps, is because we all want to feel like we’re walking into Joanna Gaines farmhouse kitchen to try a freshly-piped vanilla cupcake.

And you’ll feel like you’re in her home! Silo Baking Co is a tiny shop with wooden floors and ambient lighting, and it smells like vanilla. There are cute Magnolia-themed coffee mugs and baking items and cookbooks available for retail as you wait in line. The employees are bustling around, taking customer orders and boxing up 6-packs of bright cupcakes in paper bags stamped with a branded SILOS BAKING CO logo. The whole thing feels very charming and cute, which is why I (and millions of others) love stopping by Magnolia Market. 

And yes, these are the best cupcakes in Waco. So if you’re driving by, you 100% should stop by and get a 6-pack.
